Coconut Chia Oatmeal

What I love about oatmeal and chia pudding recipes is that I can be super creative, it literally takes 5 minutes to make AND it’s nutritious! This coconut chia oatmeal recipe was so delicious and creamy!! I did let it soak overnight for the chia seeds to expand, but the fact I let it cook more on the stovetop also caused the oats expand a lot more so overall it was a very soft texture. I don’t like having cold overnight oats where I need to chew on the oats.

It rarely takes any time to prepares so the convenience makes it that much better 🙂

I have a deep love for breakfast foods. I always make sure I get a healthy, nutritious & protein packed breakfast to start my day!

Ingredients:

  • 1/3 cup Purely Elizabeth Ancient Grain Oats
  • 1 tbsp Chia Seeds
  • 1 scoop Whey (optional) – If you take this out, only use 1/3 cup water)
  • 1 tbsp shredded coconut
  • 1/2 cup water
  • Splash of almond milk (I used unsweetened Califia Farms Vanilla)
  • Toppings of choice

  

I love fruit as a topping because it’s a healthy natural sweetener. I add it in my oatmeal, toasts, pancakes, waffles, etc!! It has so many essential nutrients we need! Sometimes I would add a bit of honey or coconut sugar to sweeten it a bit more.

I also love adding nuts/nut butters as toppings because healthy fats give satiety, keeping you full longer since they take longer to digest! In the morning, I always remember to have some healthy fat such as nuts, nut butter or avocado (when I have toast).

Directions:

  1. Overnight, mix together oats, chia seeds, shredded coconut & water together and put into fridge. (~8 hours)
  2. In the morning, heat up on medium heat on stovetop with a splash of almond milk. Stir when it bubbles.
  3. Continue to stir until the oatmeal gets a creamy consistency.
  4. Pour into a bowl, decorate with your favorites fruits, seeds, nuts, nut butters and toppings!
