Peanut Butter Banana Muffins – 3 ingredients

I’m a big fan of simple recipes. Simple, healthy AND delicious recipes. I don’t always have too much time to make recipes with a bunch of ingredients so with a packed schedule like today I decided to make these 3 ingredients muffins! Especially since I have a bunch of bananas that are starting to have black spots. Banana nice cream in the near future?? 🙂

They are the perfect snack when sugar cravings hit. When you heat these muffins up and smear some PB on top, they are perfect. Bananas, peanut butter & egg whites are all staples in my diet. When you add all 3 together in a muffin, can it get any better?? Uh, nope!

A lot of you have been asking for the recipe, so here it is!

Recipe Yields: 18 mini muffins


  • 2 extra ripe bananas
  • 1/4 cup nut butter
  • 1/4 cup egg whites
  • Optional: Raisins, nuts, seeds, chocolate chips, cacao nibs, etc


I added Cacao Nibs to my recipe since I didn’t have chocolate chips.


When they were in the open they were more puffed up but when I took them up they sank down a bit.

I made 2 batches. I baked the first batch for 15 minutes. The second batch is a bit more golden brown which was baked for 20 minutes! Next time, I would add some baking powder or maybe some oat flour to help it rise a bit better. I’ll be playing around with this basic recipe!



  1. Preheat oven to 350 F.
  2. Blend together your bananas, nut butter and egg whites until well mixed.
  3. Gently stir in any toppings you decide to add
  4. Spray or apply a thin layer of oil on each muffin tin
  5. Pour in your mixture until 3/4 full
  6. Bake at 350 for 15-20 minutes or until toothpick comes out clean

One batch won’t last long because they’re just so addicting once you eat your first bite 🙂
