3 Ingredient Cookies

I came back from work today & decided I wanted to bake something!! I rarely use my oven other than for baking my meats/protein & roasting veggies. BUT I had a banana that was black & spotty (not the one in the pic) and had oats at home. Hmm, why not try to make a simple, healthy yet delicious cookie recipe? I also have like…6 different protein powders at home so I have many to choose from. SOO.. chocolate it is!!

RECIPE YIELD: Makes 12 mini cookies

Ingredients: 

  • 3/4 cup oat flour (just blend up oats)
  • 1 banana
  • 1 1/2 scoops protein powder (I used @groundbasednutrition rich chocolate protein)

I recently bought this chocolate protein and let me say, it’s bomb!! It doesn’t leave that powdery taste and it’s not too sweet. It’s organic, vegan, soy free, dairy free, plant-based & has zero sugar! No sugar alcohols either (those are hard on my stomach). It was on sale at Whole Foods & they were giving out samples. When I tried it, I HAD to get it! I currently use this & Vega 🙂

Directions: 

  1. Preheat oven to 350 F
  2. Mix everything together in a bowl until it becomes a semi-sticky consistency
  3. Bake for 15-20 minutes

YES, THAT’S IT. I scooped the batter into a tbsp and then plopped it onto parchment paper 🙂 Then topped each one with 1 pumpkin seed just to make it prettier? 😛
