Turkey Spinach Meatloaf Cups


I love my little muffin tray. I also like bite-sized food because it’s cuter! Also, I can eat 2-3 of them and it’ll be the amount of 1 normal sized? Makes me feel a bit better :’) I wanted to make a more protein-based snack so I decided on Turkey Meatloaf Muffins! ANOTHER SIMPLE RECIPE!!!

The other day, I woke up feeling SUPER unmotivated but I still got myself to the gym. I took longer than usual to set up and being my workout because I didn’t want to. After building up a bit of willpower, I pressed start for the first 7-minute circuit and.. it was DIFFICULT. BUT 10 minutes into the workout, I got that endorphin rush & was totally feeling it! Basically, when in doubt, workout. I felt much better & more awake after. Working out = my caffeine/coffee in the morning.

After, I walked over to Pavilions in the same plaza to get 2 pounds of turkey breast & some spinach. Then went home, had breakfast, showered & then began making these easy muffins! I was excited 🙂 I made a large batch and each 1 lb match lasts me 2-3 days! I eat a lot hehheh.


Recipe Yields: 20 mini muffins or 10 large muffins 


  • 1 pound (16 oz) lean ground turkey (any ground meat works)
  • 3 egg whites
  • 1 handful chopped baby spinach (or green onions/chives)
  • 1 cup oats
  • 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 1/2 tsp cumin
  • 2 tbsp garlic powder
  • 1/2 tsp Bragg’s Organic – 24 Herbs & Spices Seasoning






  1. Preheat oven to 375 F.
  2. Mix everything together in a bowl.
  3. Bake for 25 minutes for mini muffins or 40 mins for large muffins.

My whole house smells like these muffins now. MMMMM.

Nutrition Facts: Per mini muffin 

Calories: 49 calories
Carbs: 2.9 grams
Protein: 7.7 grams
Fat: 0.7 grams

For large muffins nutrition facts, just multiply by 2.

Put them in your fridge if you will finish it all in 2-3 days. If not, these will freeze well. If in fridge, heat up in the microwave for 15-20 seconds. If frozen, heat up for 30-60 secs depending on your microwave power.
