5-Ingredient Sweet Potato Fudge Brownies (GF, Sugar Free, Vegan)

Today, I’m officially starting an elimination diet! I’m taking out eggs from my diet to see if my body responds in a positive way. I’ve been having some stomach issues and I’m trying to figure out the root cause. Hopefully this will be a successful experience! I know I’m lactose intolerant so milk, cheese & yogurt are already eliminated. I replace lactose products with lactose-free alternatives such as nut milks (almond, cashew, hazelnut), soy/almond cheese & coconut/almond milk yogurt. It’s not quite the same but it’s the only choice I have! I take lactose pills when I eat pizza or dairy ice cream sometimes but it doesn’t always work so I need to weigh the pros and cons haha!

Weekends are for baking new things. Well, at least for me! I usually make and test about 2-3 recipes every weekend because I’m usually too busy during the weekdays with work. Also, because food photography is always best during the day :’) making new recipes is one of my new found hobbies.

Yesterday, I made sweet potato brownies which turned out so perfectly!

This new recipe is different and altered a bit. I doubled the portions, took out the sweetener, used less nut butter & added almond milk. This created an extremely fudgy brownie.

Would you loook at thaaaat.


It’s a fact I ate 4 pieces of these fudge brownies within 10 minutes after coming out the oven. Did I wait for it to cool? Not for the first 2 pieces. Sorry, not sorry!

Oh man, I just thought of adding ice cream on top… think about how amazing that would be.


Here’s my all time favorite protein powder! I love baking so it’s perfect because it has no flavor. I flavor my baked goods according to what I’m baking. For example, a chocolate protein powder will always have a chocolate flavor whatever you add in. This Natural Citizen protein powder is plain so it doesn’t mess with the flavor of my baked goods. Recipe Yields: 15 – 2×2 square brownies

-2 cups mashed sweet potato
-3/4 cup Natural Citizen Organic Protein (Use code “WINNIESBALANCE” for $10 off)
-1/2 cup cacao powder
-1/2 cup peanut butter
-1/4 cup almond milk
-optional: 1/4 cup maple syrup/honey

1. Preheat your oven to 350 F.
2. Steam a large sweet potato (which is about 1.5 pounds).
3. When done steaming, mash it and measure it out to 2 cups.
4. Mix all 5 ingredients together in a large bowl. If desired, add chocolate chips, nuts, sweetener or any other mix-ins of choice!
5. Line a 6 x 10 pan (or any low medium sized rectangular/square pan) with parchment paper.
6. Press mixture into pan and bake for 20-25 minutes.

It will be very fudgy so let it cool for at least 15 minutes before you cut them into pieces. Let me know how you like them and if you do anything differently to the recipe because I would love to try it out too!
