Coconut Flour Cinnamon Raisin Muffins

I’ve been loving coconut flour recipes. It’s a challenge to bake with, which is fun in my opinion. I played around with different recipes and after I made this one, I knew I had to share it! It’s lightly sweetened with coconut sugar so it’s not overly sweet. Recipe below. Go go go!

Recipe Makes: 24 mini muffins or 12 regular-sized

Ingredients:
-1/4 cup oat flour (easily blend up raw oats in your blender)
-3/4 cup coconut flour
-1/4 cup coconut sugar
-6 tbsp protein
-1 tbsp cinnamon
-1/2 tsp baking soda
-1 tsp baking powder
-1 cup liquid egg whites
-3/4 cup almond milk (or other milk of choice)

Directions:
1. Preheat oven to 350 F.
2. In a large bowl, mix together oat flour, coconut flour, coconut sugar, protein powder, cinnamon, baking soda & baking powder.
3. Mix together egg whites & milk.
4. Pour wet mixture into dry and slowly mix until a thick batter forms.
5. Pour batter into greased muffin tins until 3/4 full.
6. Bake for 20 minutes.

Tip: It’s best to cool muffins outside of the baking tin to prevent any sticking!
