4-Ingredient Crunchy SuperButter Cookies


My favorite thing about this recipe is the simplicity – there’s only 4 ingredients! You put everything into one bowl, mix, roll into balls, press them down & into the oven they go. SO easy! I actually made these after coming home from school. After a tiring day… I always somehow end up in the kitchen cooking or baking. It’s my form of stress relieving. Also, the whole house smelled like peanut butter – pretty great if you ask me! All about it! :’)


When it comes to baking, I try to make healthier recipes. I enjoy finding replacements for ingredients and see how texture/consistency changes. I enjoy using different flours, sugars and substitutes. Especially since I’m in the nutrition/dietetic field, it’s important for me to understand and have knowledge on the variety of food ingredients used in products. My current favorites are almond flour, coconut flour, coconut sugar, sweet potatoes, nut butters and bananas in my baking.

So yes, I do gear towards healthy when it comes to baking. I’m not afraid of using sweeteners or fats though. For fats, I like using grass-fed butter, ghee butter or coconut oil! For sugar, I use coconut sugar, honey, maple syrup or raw cane sugar.

Sugar goes through a chemical reaction and caramelizes when used in a baked product – leading to deep shades of brown and complex flavors. When the moisture evaporates in the oven, the sugar re-crystallizes – leading to a crunchy texture. Which is how this recipe gets the crunch – shoutout to coconut sugar!


Remember, everything in moderation. ALL FOODS FIT. You can have what you crave. Instead of restricting and indulging later – give yourself what you want. If you want a cookie, get yourself a cookie. Eat mindfully, pay attention to your hunger/fullness signals and you’ll find your food freedom. There is no point in feeling guilty for eating certain foods. ALL FOODS FIT. Remember that!

Prep Time: 10 minutes // Cook Time: 10 minutes // Total Time: 20 minutes
Servings: 16 


  • 1 cup Wild Friends Peanut Cashew Super Butter
  • 1/2 cup coconut sugar
  • 1 egg
  • 2 tsp cinnamon
  • Optional: cashews (to place on top of each cookie)


  1. Preheat oven to 350 F and line a baking tray with parchment paper.
  2. Mix together super butter, coconut sugar, egg and cinnamon.
  3. Using a tablespoon, add 1 heaping tbsp of batter onto baking sheet. Place about 3 inches apart because they will expand when baking.
  4. Flatten using the palm of your hand or back of a spoon.
  5. Using a fork, flatten in a crisscross pattern.
  6. Bake for 10 minutes or until light golden brown. Cool for 10 minutes before removing to put on cooling rack.

**NOTE: They will seem uncooked/very soft straight out the oven. As it cools, it will harden. Make sure you do not overbake them!
