Baked Herb & Garlic Drumsticks

I use to have chicken drumsticks all the time as a child. My mom made soy sauce drumsticks and I remember getting overly excited every time. Maybe it’s just me but drumsticks are fun to eat! I enjoy holding it by the handle and eating off the bone!

Chicken drumsticks are also easier to bake without drying out unlike chicken tenders or breast. I like to keep the skin on because it gets crispy which helps keep the meat tender while the bones help enhance flavor. Same goes with wings!

I have my usual chicken recipes because they’re easy and quick to make – but I decided to venture out with this one. I’m so glad I did because this easily makes it to the top of my list of chicken recipes for sure! I’ll be incorporating more chicken drumsticks into my meals now.

I have garlic powder, onion powder, cumin, oregano, basil, cayenne, salt and pepper. All these herbs/spices are mixed together in a large bowl, coated with the chicken and then baked. Easy preparation methods are the way to go! This recipe is easy and packed with flavor! Definitely my type.

I had two chicken drumsticks as my lunch with some sauteed snow peas, 1/2 an avocado (YES to healthy fats), cauliflower curried rice and cayenne hummus. Let me say.. this bowl was a bit spicy and so packed with flavors! I definitely will be making this again no doubt.

Prep Time: 10 minutes // Cook Time: 10 minutes // Total Time: 20 minutes

Ingredients

  • 8 large chicken drumsticks (I prefer with the skin still on)
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp cayenne
  • 1/2 tsp salt
  • 1/2 pepper
  • 2 tbsp olive oil


Directions

  1. Preheat oven to 425 F.
  2. In a large bowl, mix together all herbs and spices.
  3. Toss chicken drumsticks into spice mixture and coat with 2 tbsp olive oil.
  4. Add Place drumsticks on baking tray. Drizzle more olive oil on top.
  5. Bake for 25-30 minutes. Turn over and bake for another 15 minutes.
