My fridge broke two days ago so it’s not keeping my food as cold as it should be. It’s in temperature danger zone – food needs to be under 40° or above 140°F to be safe! I had to quickly finish all my veggies & prepped meats so I had savory tacos for breakfast this morning. I finished my leg workout and came home to this and was so dang happy! Post-workout meals are always so so rewarding :’)
Today’s leg workout:
20x double pulse jump squats
30x split jumps
30x reverse lunge + knee lift
15x barbell sit squats (w/ 40lb barbell)
30x weighted walking lunges (w/ 15lb dumbells)
20x 180° jump squats
20x crab walks (w/ 25lb plate)
15x split squats w/ 3 stacked-stepper
20x deadlifts (w/ 40lb barbell)
These are really simple tacos. I literally just have 2 heated up corn tortillas – spinach, roma tomatoes, baked turmeric cumin-spiced chicken, avocado and some jalapeño hot sauce from Trader Joes!
Super simple and easy – aka my kind of meal!
I added some black sesame seeds on top of the avocado for more healthy fats! Don’t be afraid of healthy fats because we need them. There are 4 fat-soluble vitamins which are ADEK. For these vitamins to be absorbed, we need to consume fats! Also, fats help absorb antioxidants which help fight free radicals, preventing a variety of diseases. Fats give proper bodily function to your cells, brain and heart! Don’t be afraid of fats 🙂 They are good for you. Everything in moderation, remember that!
Recipe Yields: 2 servings
Prep Time: 5 minutes | Cook Time: 20 minutes | Total Time: 25 minutes
- 4 corn tortillas
- 4 cups baby spinach
- 8 oz shredded chicken (2 chicken tenders)
- 1/2 avocado
- 1 medium roma tomato
- Black sesame seeds (for garnish)
- Hot sauce (optional)
Chicken recipe: 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp turmeric, 1 tsp cumin, 1 tsp oregano, 1 tsp basil, 1 tsp paprika & 3 tbsp olive oil.
- Preheat oven to 400°F.
- In a mixing bowl, throw together 4 chicken tenders along with spices mentioned above.
- Bake for 15-20 minutes or until chicken reaches internal temperature of 165°F.
- When chicken is done, shred into pieces.
- Cook tortillas on a pan for 1 minute per side.
- Assemble tacos with spinach, tomatoes, shredded chicken, avocado and tomato.
