Almond Flour Banana Bread

Bananas and Bread. Also known as two staples that I always have in at home. Add them together and you get this tasty creation. This recipe is naturally sweetened with bananas. You can add some honey/maple syrup if you wanted to but I personally didn’t need. I always wait until my bananas are black and spotty. Extra ripe bananas work the BEST!

Something about nut flours interest me so much! I love how different the texture is compared to all-purpose flour. It’s not a type of flour you can just substitute into any recipe that calls for all-purpose flour. For example, coconut flour is very absorbent so you don’t need a large amount in a recipe. In almost all nut flour recipes, eggs are required because of how much liquid it absorbs up. After mixing the batter together, it won’t be runny. It’ll look more dry but don’t worry, it’s like that! When it bakes, it’ll turn out fine!

Trust me. It took real discipline to not want to eat several slices at once. I had to tell myself to eat more mindfully. The bread was so moist (sorry if you hate that word) and packed with natural sweetness and delicious flavor!

I like to add nut butters or yogurts on top of my baked breads for additional flavor. It tastes a lot better that way! But either way (with spread or without), it tastes BOMB!

Recipe Yields: 10 slices
Prep Time: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes

-3/4 cup almond flour
-1/4 cup coconut flour
-1/2 tsp salt
-1/2 tsp baking soda
-4 medium sized mashed bananas
-2 eggs
-1 tbsp ghee (oil or melted butter also works)
-Sliced almonds and shredded coconut for sprinkling on top

1. Preheat oven to 350°F.
2. In a medium bowl, mix together almond flour, coconut flour, salt and baking soda.
3. Add bananas, eggs and ghee into dry mixture and gently fold in.
4. Pour into a 9×5 loaf pan and bake for 35-40 minutes or until a toothpick comes out clean.
5. After 10 minutes, transfer to a cooling rack and let it cool for 15-20 minutes before cutting into slices!
