Pumpkin Berry Oatmeal Yogurt Bowl

If you didn’t know by now, I’m obsessed with perfect bars because well.. it’s just so dang good. As simple as that! They recently came out with this flavor and I’m totally digging it.

Also, after soul cycle, I’m starving and want all the food I can get. So this filling bowl definitely satisfied that post-spin hunger!

Recipe Yields: 1 serving | Prep + Cook Time: 10 minutes 

Ingredients:
-3/4 cup raw quick cooking oats
-1 cup almond milk
-2 fresh figs
-1/2 cup mixed berries
-1 container coconut siggis yogurt
-1/2 pumpkin pie perfect bar
-1-2 tbsp almond butter
-Cacao nibs + chia seeds for sprinkling (optional)

Directions:
1. Preheat a small pot to medium heat & add in raw quick cooking oats with almond milk.
2. Cook until oatmeal thickens up (about 2-3 minutes). I like to stir in a bit of extra almond milk after removing it from the stove.
3. Place into bowl with fresh figs, berries, yogurt, pumpkin pie bar chunks, almond butter & other toppings of choice!
