There’s been something going on between me and pizza. What I love about homemade pizza is I can add leftovers on top or just whatever I crave. Chicken pizza? Got it. Leftover delicata squash from meal prep? Just throw it on top of a pizza. Add all the leftovers on top and you got yourself super flavorful slices of delicious.
Anyways, I can work more on my blog now because I just got done with my third dietetic internship interview! It felt like a marathon… haha, waiting and preparing for the next one felt like years. I’m really hoping for the best! I did the best I can, so the next step is to keep preparing myself professionally as a future RD.
Well, here’s a pizza. A pesto pizza! Pesto is one of my favorite spreads for sandwiches, pizza and pasta! I just love basil and pine nuts. Something about nuts make for the BEST spreads! Hummus, cashew creams – I’m definitely a fan of all that! Nuts are a great source of healthy fats and I always try to incorporate it in my meals/snack!
Delicata Squash Chicken Pesto Pizza
Pizza topped with delicata squash, spinach, tomatoes and shredded chicken. This delicata squash will definitely bump up your pizza game!
- 1 pre-made pizza crust
- 1/2 cup pesto
- 1/2 cup mozzarella cheese
- 1 cup raw spinach
- 1 slice tomato
- 1/2 cup roasted delicata squash
- 2-3 oz chicken breast
- Red pepper flakes basil, oregano
- olive oil for brushing
Prepare crust according to package instructions.
Using a cooking brush, brush a thin layer of olive oil on top of crust.
Spread pesto and sprinkle mozzarella cheese on top.
Add toppings: raw spinach, delicata squash, tomato and chicken.
Sprinkle basil and oregano on top.
Bake for 8-10 minutes or according to package instructions.
Top with red pepper flakes, cut into 6 slices and enjoy!
