These tacos are perfect on a taco tuesday.. or any other day of the week. Tacos are for any days, right?!

Whenever I have tacos, I try to create some new flavor combinations. Sometimes it’s shredded curry chicken with corn, or shrimp + carne asada (aka surf n’ turf). Speaking on surf n’ turf, I have a spot called Oscars seafood in San Diego! It’s my favorite taco spot of all time. They have the best seafood tacos. It’s always packed so the seafood is guaranteed fresh. The portions are generous and oh you know, I love generous portions! One thing I need to make is that creamy seafood taco sauce. I’m going to make it happen one day.

Cumin is one of my favorite spices to add into my shredded chicken especially when I’m making tacos. I use to work at Chipotle and cumin is a huge flavor contributor to all the meats so I’m taking that knowledge, and enhancing my cooking now with that past experience.

In my tacos, I like to add a source of protein, which can be chicken, pork, beef, shrimp or beans. In this case, I added shredded chicken and roasted chipotle red beans! I also always add in veggies, so I added in sautéed bell peppers, cabbage and cilantro. Also, of course a side of lime, salsa verde and tortilla chips!

Serves 4
Shredded cumin chicken and bean tacos on corn tortillas. Stuffed with sautéed bell peppers, shredded lettuce, cilantro and salsa verde.

For cumin chicken
  1. 2 tsp oil
  2. 2 chicken breasts (cut into 1" strips)
  3. salt and pepper to taste
  4. 1 tsp cumin
  5. 1 tsp garlic powder
  6. 1/4 tsp paprika
For bell peppers
  1. 1 whole green bell pepper (cut into strips)
  2. 1 whole red bell pepper (cut into strips)
  3. 1 tsp oil
  4. salt and pepper to taste
  5. 16 street-sized corn tortillas, warmed
  6. cilantro for garnish
  7. lime wedges
  8. salsa verde, for topping
  1. Cut up bell peppers into strips, leave to side.
  2. Cut chicken breasts in 1" strips.
  3. Heat up oil in a large pan on medium heat.
  4. Add in chicken, salt and pepper.
  5. Saute for 5-7 minutes. Then add in cumin, garlic powder and paprika.
  6. Toss seasonings into chicken and cook for an additional 3 minutes. Then remove chicken from pan and let it cool before shredding up.
  7. In a medium pan, add in oil and cook bell peppers with salt and pepper for 3-5 minutes.
  8. Warm up corn tortillas and double layer each one.
  9. Build the tacos by adding in shredded chicken, bell peppers, cabbage, cilantro and salsa verde.
