Easy Weekday Meal: Sweet Potato Gnocchi w/ Garlic Chicken + Veggies

You have no idea how excited I was when I spotted a package of sweet potato gnocchi at Whole Foods Market 365 in the frozen section!! I grabbed 3 containers and was debating on even grabbing more. I’ll be sure to make regular stops at 365 for it. I also grabbed some pre-cut and ready-to-grill veggies to cook with my gnocchi!

First of all, what is Whole Foods Market 365? 365 is an evolution of Whole Foods and supports the same purpose of quality, affordability and simplicity. I personally love 365 because of the more affordable prices while maintaining the same quality standards. You can’t say no to good quality AND affordable prices! They have all the basics you need; fresh veggies, fruits, breads, spreads, pasta, etc. Their food is all free from artificial colors flavors, preservatives and sweeteners. It’s also free of high fructose corn syrup, added MSG and hydrogenated fats. I mean, there’s good quality, affordable prices AND also  healthy ingredients. Can it get any better than that?

365 has plenty of grab-and-go items like sandwiches, salads, wraps, fruits, veggies, etc. They’re perfect for a busy student, intern or anyone who has a busy work life!

My dietetic internship started two weeks ago so I need to meal prep weekly. I typically meal prep twice a week. I prep for 2-3 days at once so my food is fresh! I don’t have time to cook every meal, so I cook foods in bulk, prepare easy foods or grab ready-to-eat foods. It helps when I buy pre-washed and pre-cut items. I purchased 2 of the pre-packaged ready to grill veggies, which saved me so much time when I was cooking. Also, the frozen sweet potato gnocchi was SUPER convenient to cook too. It actually tastes like sweet potato which I love! The first ingredient is sweet potato, which means there is the most amount of sweet potato compared to all other ingredients. Cook together the gnocchi and veggies and you have yourself a nutritious meal in less than 20 minutes!

I made enough sweet potato gnocchi to have several meals prepared for when I come home from my internship at night. After my internship, I go to the gym and then home for dinner. It helps to have food prepared especially after a long day AND a workout.

The ready to grill veggies had bell peppers, zucchini, yellow squash, red onion and mushrooms.

I like how each package has bit of each vegetable. They also have containers of only squash or only mushrooms if you would prefer that instead!

The ingredients for the sweet potato gnocchi are: 
Sweet potato, unenriched durum wheat semolina flour, potato flakes, water, pasteurized cage free eggs, salt and sage.

I also added in some sliced grape tomatoes I bought from the produce section.

Voila! Total of 20 minutes!

Sweet Potato Gnocchi w/ Garlic Chicken + Veggies

Sweet potato gnocchi sautéed with garlic chicken and vegetables. A delicious and nutritious twist to your typical pasta dish on a weekday night!

Ingredients

  • 2 containers sweet potato gnocchi
  • 2 containers ready to grill veggies diced up
  • 16 oz boneless skinless chicken breast cut into strips
  • 3 tbsp olive oil
  • salt, pepper to taste
  • 1 clove garlic minced

Instructions

  1. In a large pan, heat up 1 tbsp olive oil to medium heat.

  2. Add in 1lb chicken breast strips. Cook until juices run clear and internal temperature reaches 165°F. Remove from pan and leave to side. 

  3. In the same pan, add 1 more tbsp of olive oil. Add in veggies and saute for 3-4 minutes with salt, pepper and minced garlic. Remove from pan and leave to side.

  4. In the same pan, add another tbsp of olive oil. Add in sweet potato gnocchi and sauté for 5 minutes or until slightly soft. Add 1-2 tbsp water if necessary. 

  5. Bring down to low heat and toss in cooked chicken and veggies. 

  6. Serve with a sprinkle of red pepper flakes and pepper on top. I also added some nutritional yeast sauce!
