Oatmeal is one of my favorite go-to breakfasts! If it’s not toast, it’s in a bowl. Either oatmeal or yogurt. I love oatmeal because it’s always comforting on a hot or cold day. I love oatmeal with some fresh fruit, nuts and nut butter on top. You can really get creative with it according to what you’re craving and what ingredients you have at home.
I decided to twist up the oatmeal game and go for some baked oatmeal. It was a hit because my mom finished it up in 2 days. She asked for more so I’m looking towards more baked oatmeal recipes!
Also, if you’ve noticed, almond all my recipes have some crunch to it. Nuts, seeds and chocolate chips are my go-tos! I crave crunchy foods and textures. So yes, I threw in some pecans because my tastebuds craved it. It would also work with any other nuts you want – walnuts would be a great alternative!
Baked Blueberry Banana Collagen Oatmeal
Switch up your stovetop or overnight oats for this baked blueberry banana collagen oats. A great source of complex carbs, fiber and protein! Perfect for making ahead for this busy mornings!
- 2 cups raw oats
- 1/4 cup oat flour
- 2 scoops collagen
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp sea salt
- 2 large bananas mashed
- 1/2 cup + 2 tbsp almond milk
- 1 large egg
- 5 tbsp honey
- 1 tsp vanilla extract
- 1 1/4 cup blueberries
- 1/2 cup pecans
- 1 banana and shredded coconut for topping
Preheat oven to 350F.
Spray your 8x8 baking pan with oil.
In a medium bowl, mix together oats, oat flour, baking powder, cinnamon, nutmeg and sea salt.
In a small bowl, mash the two bananas, then add in almond milk, egg, honey and vanilla extract.
Add wet ingredients into your dry ingredients.
Fold in blueberries and pecans.
Pour mixture into your baking pan and top with sliced bananas, more blueberries and pecans. Top with shredded coconut!
Bake for 25-30 minutes.
Remove from oven and let it sit for 5-10 minutes before cutting into 9 bars!
