I first tried gnocchi when I was making it for some patients I worked with in 2017. At first, I was really confused as to what they were because it looked like little soft dumplings. It’s classified under a pasta but doesn’t taste like the typical spaghetti or rotini texture. It’s made with semolina, wheat flour, egg, salt and other ingredients. They can be tricky to cook because it will get mushy depending on your preparation method.
Gnocchi has been one of my latest trends I’ve seen on Instagram so far. I feel like it’s a chain reaction sometimes. Many times, I like to try these foods just to see what’s it about. Sometimes, it holds itself up to it’s reputation – just like this cauliflower gnocchi!

I decided to make garlic shrimp cauliflower gnocchi. I grabbed several frozen gnocchi bags from TJ’s because… I need to keep my fridge stocked up with the GOOD STUFF.
Also, I love shrimp and garlic so why not?
A tip to cooking gnocchi is not boiling it like you do with regular pasta or else it will get too mushy and stick together. The ideal and recommended prep method is to saute in a pan with oil. It makes it slightly crispy on the outside – soft on the inside.
I added in bell peppers and mushrooms into the gnocchi as well. Of course, broccolini on the side for more veggies!
I cooked it with olive oil, fresh minced garlic, salt, pepper and paprika.
Just adding a kick of spiciness from the paprika!
Garlic Shrimp Cauliflower Gnocchi
Garlic shrimp and cauliflower gnocchi cooked with bell peppers and mushrooms. A nutrient-packed and flavorful dish!
- 2 tbsp olive oil
- 2 bags Trader Joes cauliflower gnocchi frozen
- 1 lb fresh shrimp i used 16/20
- 1 cup raw veggies i used bell peppers + mushrooms
- 2 cloves minced fresh garlic
- salt, pepper and paprika to taste
In a large pan, heat up 1 tbsp olive oil to medium heat.
Add in 1 lb peeled shrimp. Cook for 1-2 minutes, then add in fresh garlic and salt and pepper to taste.
Add veggies into the shrimp mixture. Cook for another 2 minutes, then altogether remove from pan.
Add another 1 tbsp olive oil into pan with pan still on medium heat.
Add 2 bags of cauliflower gnocchi and sauté for 4-5 minutes until slightly soft and slightly brown. Add in veggies. Add 1-2 tbsp water if necessary.
Bring down to low heat and toss in shrimp.
Serve with some paprika sprinkled on top!
