This homemade blueberry chia seed jam is an easy and tasty recipe to add to breakfast toast! The jam gets gelled up from the superfood chia seeds! You can also add it to your oatmeal bowls, pancakes or french toast for a fruity kick!
Peanut butter and jelly was a favorite combo of mine growing up. It’s a classic that never gets old. I still love it now!
I like making my own jam at home because I can control it’s sweetness! The berries itself is sweet, so I just use a bit of maple syrup!
The chia seeds need to be soaked in either water or almond milk. It a 4:1 ratio. This helps the chia seeds swell up, causing the jam to thicken up. The chia seeds also add a bit of omega 3 fats! Yogurt was also mixed in for some creaminess.
This is a delicious alternative to store-bought jam. You can also make this jam with raspberries, blackberries or strawberries – or a mix of all 4 berries!
Blueberry Chia Seed Jam
- 1 tbsp chia seeds
- 1/4 cup almond milk
- 2 tsp yogurt
- 1 cup frozen blueberries
- 1 tbsp maple syrup
- 1 tsp fresh lemon juice
- 1/2 tsp vanilla extract
- In a small bowl, allow chia seeds and almond milk to soak for 10 minutes. Mix in yogurt.
- Add frozen blueberries to a saucepan and cook on low for 8-10 minutes, stirring often and mashing to break them up.
- When the berries are broken up, mix in chia seed mixture, maple syrup, lemon juice and vanilla extract.
- Add jam on top of toasts and add remaining to a glass jar. Allow to cool before storing in a sealed jar!
