mushroom basil marinara w/ chicken meatballs tossed w/ cavatappi pasta ๐Ÿ…๐ŸŒฟ๐Ÿ„๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ it may sound like a handful but itโ€™s not a handful to make ๐Ÿ™Œ๐Ÿผ i may not always make everything from scratch because i donโ€™t have time for that ๐Ÿ˜ณ i focus on using fresh ingredients and cooking w/ sauces that have quality ingredients to make easy meals like this!!
to make: bring a medium pot of salted water to boil. when it comes to a boil, bring down to low boil and add in 1 box @eatbanza cavatappi pasta. set a timer for 7 mins. drain and toss with 1 tbsp olive oil. place back into pot. meanwhile, heat up a large pan and add 1 tbsp butter + add 1 whole chopped onion. let onion caramelize until slightly translucent (4-5 mins). add in 1 1/2 cups @raoshomemade tomato basil marinara, @bilinskisausage italian chicken sausage and 1 cup mushrooms. simmer together on low for 5 minutes. toss into pot of pasta, gently mix and SERVE! ๐Ÿ™Œ๐Ÿผ top with fresh basil (or even mix fresh basil in) & crushed red peppers obviously. if you make this, hope you enjoyed it as much as me ๐Ÿ˜‰

lunch was this plate of baked salmon, green beans and @lundbergfarms brown rice! the salmon filet was from @hungryroot (use 25OFF2WINNIE for $25 off 2 boxes). i preheated the oven to 425F, brushed the salmon w/ @chosenfoods avocado oil and sprinkled with black pepper + paprika + garlic powder. baked for 12 mins! i topped it with my nutritional yeast sauce ๐Ÿ’ฏ
nutritional yeast sauce: together 1/2 cup nutritional yeast, 1/3 cup water, 1/2 tsp garlic powder, sprinkle of black pepper and a bit of paprika. you can also add in other spices as desired or even tahini for sumโ€™ extra creaminess ๐Ÿ˜Ž #winniesbalance

to make: bring 4 cups of chicken bone broth to boil, then bring down to medium boil. add in 1 cup chopped carrots and boil for 4 mins. add in dumplings & boil for 5 mins, then add in napa cabbage, sliced mushrooms, kale and 2 tbsp sesame oil. boil for another 1 minute. add to bowl and garnish with fresh green onions + black pepper! #balancedeatingrealfood #dieteticintern #rd2be #intuitiveeating #allfoodsfit #feedfeed #food52 #iamwellandgood #wholefoods #realfood #foodblogger #easyrecipes HAPPY FRIDAY!!! 5 weeks of clinicals are done, just like that ๐Ÿ˜ฑ yesterday was one of the hardest days yet. i was asked multiple questions i felt i shouldโ€™ve known. i beat myself up for it & felt inadequate. i was given a floor of patients to see on my own & 2 of them were tube feedings (which i need a lot more practice on for calculations). it was a 11 hour work day. iโ€™m exhausted but iโ€™m thankful for these moments. i can complain or i can be hard in myself... but looking back, i know itโ€™s going to be such a big learning moment for me. itโ€™s easy for me to just talk down on myself because i donโ€™t meet my own โ€œstandardsโ€ but yโ€™know, not everything goes smoothly and thatโ€™s OK!!
being almost half done w/ clinicals, iโ€™ve rotated on med surg, rehab, TCU, neuro & DOU - and have worked with 7 different dietitians! this internship keeps me on my toes for sure!
being busy doesnโ€™t mean i skip meals. breakfast is important so if youโ€™re craving something savory, these are for you ๐Ÿ’๐Ÿปโ€โ™€๏ธ these avocado quesadillas are SO good w/ a crispy fried egg on top ๐Ÿณ just wait till i break it & the yolk starts running... yeah i know, itโ€™s the best part ๐Ÿ˜‰ itโ€™s such a good dip for the quesadilla. the plate was def cleared out!
to make: heat up both sides of the tortilla on a medium pan. add mashed avocado on the top half of the tortilla, fold in half. heat until both sides are brown and crispy!! plate and top with a @vitalfarms fried egg cooked in @fourthandheart pink salt ghee, red pepper flakes and radish sprouts! try it yourself, just do it ๐Ÿ™Œ๐Ÿผ #winniesbalance
