Coconut Peanut Butter Energy Bites

Creamy peanut butter, shredded coconut and chia seeds rolled in these energy-packed bites. They're great for a snack for both kids and adults! The best thing is they only take 5 minutes to put together and don't require any oven!

Ingredients

  • 3/4 cup creamy peanut butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3 tbsp coconut flour
  • 3 tbsp shredded coconut
  • 2 tbsp chia seeds
  • 1 scoop collagen optional
  • small pinch of sea salt

Coconut Coating

  • 3 tbsp shredded coconut
  • 2 tbsp coconut flour
  • 1 tbsp coconut sugar

Instructions

  • Mix all ingredients into a large bowl.
  • Roll into 9 balls and then roll into coconut coating.
  • Eat immediately to leave in the fridge for future snacks!

Notes

These energy bites can be left in the fridge for up to 5 days.
