Carrot Cake Walnut Raisin Muffins with Greek Yogurt Frosting

Carrot cake muffins with walnuts and raisins. Topped with a delicious and healthy greek yogurt frosting!

  • 1 cup all-purpose flour oat flour also works
  • 1/3 cup coconut sugar
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 2 eggs
  • 2 tbsp almond milk
  • 1/4 cup ghee/butter
  • 1 tbsp almond butter can sub cashew butter
  • 1 tsp vanilla extract
  • 1 cup shredded carrots
  • 1/2 cup walnuts
  • 1/2 cup raisins

Greek Yogurt Frosting

  • 1 cup vanilla greek yogurt
  • 1/3 cup powdered sugar
  • 1/2 tso vanilla extract


  • Preheat oven to 375 F.
  • In a large bowl, mix together flour, sugar, cinnamon, baking soda and salt.
  • In a medium bowl, whisk together 2 eggs. Add in almond milk, olive oil, almond butter and vanilla extract.
  • Add dry ingredients into wet ingredients. Stir in carrots, chopped walnuts and raisins.
  • Bake for 20-22 minutes or until a toothpick inserted in center comes out clean.
  • When done, allow to cool for 5 minutes. Then add greek yogurt frosting on top with extra crushed walnuts and raisins!
