Carrot Cake Walnut Raisin Muffins with Greek Yogurt Frosting
Carrot cake muffins with walnuts and raisins. Topped with a delicious and healthy greek yogurt frosting!

- 1 cup all-purpose flour oat flour also works
- 1/3 cup coconut sugar
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp sea salt
- 2 eggs
- 2 tbsp almond milk
- 1/4 cup ghee/butter
- 1 tbsp almond butter can sub cashew butter
- 1 tsp vanilla extract
- 1 cup shredded carrots
- 1/2 cup walnuts
- 1/2 cup raisins
Greek Yogurt Frosting
- 1 cup vanilla greek yogurt
- 1/3 cup powdered sugar
- 1/2 tso vanilla extract
Preheat oven to 375 F.
In a large bowl, mix together flour, sugar, cinnamon, baking soda and salt.
In a medium bowl, whisk together 2 eggs. Add in almond milk, olive oil, almond butter and vanilla extract.
Add dry ingredients into wet ingredients. Stir in carrots, chopped walnuts and raisins.
Bake for 20-22 minutes or until a toothpick inserted in center comes out clean.
When done, allow to cool for 5 minutes. Then add greek yogurt frosting on top with extra crushed walnuts and raisins!
