Banana Bread Cake Bars with Honey Cream Cheese Frosting

These are soft, delicious and definitely is one of my new favorite ways to use up my ripe bananas! The honey cream cheese on top is a touch of perfection!

Ingredients

  • 3 extra ripe bananas
  • 2 eggs
  • 2 tbsp coconut oil, melted
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1/8 tsp sea salt

Vegan Cream Cheese Frosting

  • 8 oz vegan cream cheese
  • 2 tbsp coconut oil, melted
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp almond milk

Instructions

  • Preheat oven to 350F. Prepare a 8 x 8 baking tray with parchment paper.
  • In a large bowl, mash bananas and add in eggs, coconut oil, maple syrup and vanilla extract.
  • Add in almond flour, coconut flour, baking soda and sea salt. Slowly mix in crushed walnuts.
  • Transfer to baking sheet and bake for 28-30 minutes or until toothpick inserted in center comes out clean.
  • Allow to cool for at least 10 minutes. While cooling, mix together frosting ingredients. When bars are cooled, spread frosting on top, sprinkle with more crushed walnuts and cut into 16 pieces.
