Chocolate Chip Pumpkin Spice Blondies

Soft, fluffy and flavorful with a perfect kick of pumpkin spice! The chocolate chips on top and in the blondies complement the recipe so well! If you are craving a fall treat, these pumpkin spice blondies are it!

  • 3/4 cup pumpkin puree
  • 1 egg
  • 1/2 cup coconut oil melted
  • 1 tsp vanilla extract
  • 3/4 cup spelt flour can replace with oat flour
  • 3/4 cup oat flour
  • 3/4 cup coconut sugar
  • 2 tsp pumpkin pie spice
  • 3/4 tsp baking soda
  • 1/4 tsp sea salt
  • 2/3 cup chocolate chips


  • Preheat oven to 350F. Prepare a 9x13 or 8x8 baking pan with parchment paper.
  • In a large mixing bowl, mix together pumpkin puree, egg, melted coconut oil and vanilla extract.
  • Add in flour, coconut sugar, pumpkin pie spice, baking soda and sea salt. Fold in chocolate chips.
  • Transfer to baking pan and spread until top is even. Sprinkle with extra chocolate chips.
  • Bake for 20 minutes until toothpick comes out clean! Allow to cool for 10 minutes before transferring to cooling rack to cut into 18 pieces.
