Ingredients
3extra-ripebananasmashed
1/4cupplain or vanilla yogurt
1tbspcoconut oil, melted
1cupsweet potato puree
1/3cupmaple syrup
2eggs
1tspvanilla extract
1 1/2cupswhole wheat flour
1tspcinnamon
1/8tspground cloves
1tspbaking soda
1/2tspbaking powder
1/2tspsea salt
Instructions
Preheat oven to 350F. Prepare 9x5 loaf pan with parchment paper.
In a large bowl, mash bananas with a fork. Add in yogurt, sweet potato puree, maple syrup, eggs and vanilla.
Add in whole wheat flour, pumpkin pie spice, baking soda, baking powder and sea salt. Mix until combined.
Transfer to baking pan and top with granola. Bake for 60 minutes or until toothpick inserted in center comes out clean.
