Sweet Potato Whole Wheat Banana Bread

Ingredients

  • 3 extra-ripe bananas mashed
  • 1/4 cup plain or vanilla yogurt
  • 1 tbsp coconut oil, melted
  • 1 cup sweet potato puree
  • 1/3 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt

Instructions

  • Preheat oven to 350F. Prepare 9x5 loaf pan with parchment paper.
  • In a large bowl, mash bananas with a fork. Add in yogurt, sweet potato puree, maple syrup, eggs and vanilla.
  • Add in whole wheat flour, pumpkin pie spice, baking soda, baking powder and sea salt. Mix until combined.
  • Transfer to baking pan and top with granola. Bake for 60 minutes or until toothpick inserted in center comes out clean.
