Fluffy Pumpkin Spice Pancakes (Gluten-Free)
These fluffy pancakes are packed with cozy fall flavors like pumpkin puree, pumpkin spice and cinnamon! Made with oat flour and sweetened with a hint of coconut sugar!

- 1/2 cup oat flour
- 1 tsp coconut sugar
- 1/4 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1 tsp baking powder
- pinch of sea salt
- 1/4 cup +1 tbsp pumpkin puree
- 1 egg
- 1/4 cup almond milk
- 1 tbsp coconut oil
In a medium bowl, mix together oat flour, coconut sugar, pumpkin pie spice, cinnamon, baking powder and sea salt.
Add in pumpkin puree, egg and almond milk.
Preheat pan to low-medium heat with coconut oil. Add in batter about 3-4 tbsp at a time.
When bubbling, flip over to cook until both sides are golden brown, about 1-2 minutes. Remove from pan and repeat with remaining batter!
