A popular korean sweet potato noodle stir fry packed with veggies and meat! This is a simple recipe that would be delicious as an appetizer, side dish or even a main meal!

Ingredients
1lb sweet potato noodles
2tspsesame oil
2eggsscrambled
1yellow onionsliced
1red bell peppersliced
1green bell peppersliced
3/4cupshredded carrots
1/2bunchgreen onionsthinly sliced
4-5cloves garlicminced
1/2lbspinach
Sauce
6tbspsesame oil
10tbspsoy sauce
5tbspbrown sugar
Instructions
Prepare sauce for the ingredients by mixing together sesame oil, olive oil, soy sauce and brown sugar. Leave to side.
Add 2 eggs into a small bowl and whisk together, leave to side.
Prepare noodles - bring large pot of water to boil with a bit of oil, then add noodles and cook according to package instructions. Drain when cooked and then transfer back to pot.
Preheat a large pan to medium heat with sesame oil to scramble 2 eggs, then remove from pan and leave in a small bowl. Add more sesame oil to the pan to cook garlic, yellow onion, bell peppers, carrots and green onions until soft, about 2 minutes. Use a splash of the sauce to cook.
Add scrambled eggs back into pan, then mix in spinach to wilt. Turn off the heat and transfer to the pot with noodles to toss with the rest of the sauce. Serve with sesame seeds on top! This is best served warm!
