Oat Flour Cinnamon Apple Pie Pancakes

Soft & fluffy on the inside, golden & slightly crispy on the outside! There’s chopped apples in each bite & a sautéed cinnamon apple topping which tied together this whole recipe!

  • 3/4 cup oat flour
  • 2 teaspoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup almond milk
  • 1 large eegg
  • 2 tablespoons applesauce
  • 1/4 cup apples finely chopped
  • coconut oil for cooking

Sauteed Cinnamon Apple Topping

  • 1 teaspoon coconut oil
  • 1/4 cup chopped apples
  • 2 teaspoons brown sugar
  • 1/4 teaspoon cinnamon


  • In a large mixing bowl, mix together oat flour, brown sugar, cinnamon, baking powder and baking soda.
  • Whisk in almond milk, egg and applesauce. Gently fold in chopped apples.
  • Preheat pan with coconut oil to medium heat. Add in batter 2 tbsp at a time for mini pancakes or 1/4 cup for standard sized pancakes. Let pancakes cook until bubbles form, then flip. Cook until both sides are golden brown! Top with sautéed cinnamon apple topping & maple syrup!
