Ingredients
8small nori sheets
2salmonfilets
4tablespoonsmayonnaise
1 avocadothinly sliced
Sesame seeds for garnish
Furikake for garnish
Cucumbers
1smallcucumberjulienned
2tablespoonsvinegar
1/2 teaspoonsugar
pinch of sea salt
1teaspoonsesame oil
Sushi rice
1cupshort grain sushi rice
1cupwater
1tablespoonrice vinegar
1tablespoonsugar
1/4teaspoonsea salt
Instructions
Prepare sushi rice and cucumbers - leave to side. I cooked the rice in my rice cooker. The cucumber ingredients were just all tossed together in a large bowl.
Preheat pan to medium heat with olive or sesame oil. Cook salmon filets with salt and pepper. Cook until flaky. Remove from pan.
To assemble, place one nori sheet shiny side down and press down a spoonful of sushi rice, leaving a 1/4 inch border. Spread mayonnaise over rice. Top with some salmon, cucumbers and avocado. Garnish with furikake!
