Ingredients
8ozuncooked linguine
1tablespoonbutter
4clovesgarlicminced
1lbshrimppeeled and deveined
3cupspacked baby spinach
1/4cupparsleychopped
Salt and pepper to taste
1/2of a fresh lemon
1/4cupgrated parmesanI used vegan
More fresh parsley, chopped
Instructions
Bring a big pot of water to boil. Prepare linguine according to package instructions. Drain and leave to side.
Add 1 tbsp butter to melt in pot, add garlic and shrimp to cook. Add in pasta, baby spinach, fresh parsley, salt and pepper to taste. Squeeze 1/2 lemon over pasta and grate 1/4 cup parmesan to mix in.
Serve with more shredded parmesan on top with red pepper flakes!
