Ingredients
2very ripe bananas
1egg
¼cupmilk
1cupall-purpose flour
1teaspoonbaking powderoptional for fluffiness
½teaspooncinnamon
Pinchof salt
½cupfinely grated apple
½cupfinely grated carrot
Instructions
Preheat oven to 350°F and line or grease a muffin tin.
In a large bowl, mash the bananas until smooth.
Add the egg and milk and stir to combine.
Fold in the finely grated apple and carrot.
Add flour, baking powder, cinnamon, and salt. Mix gently until just combined. Do not overmix.
Fill muffin cups about ¾ full.
Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
