Ingredients
1ripe avocado
1/2cupunsweetened applesauce
1/4cupplain whole milk yogurt
1egg
1teaspooncinnamon
1teaspoonvanilla extractoptional
1cupall-purpose flour
1teaspoonbaking powder
Instructions
Preheat oven to 350°F. Line or grease a mini muffin pan or regular muffin tin.
In a mixing bowl, mash the avocado until smooth.
Add applesauce, yogurt, egg, cinnamon, and vanilla extract. Mix until combined. Stir in flour and baking powder until just mixed.
Scoop batter into muffin tin about 3/4 full. Bake muffins for 18-22 minutes until center comes out clean with a toothpick.
