Ingredients

  • 1 ripe avocado
  • 1/2 cup unsweetened applesauce
  • 1/4 cup plain whole milk yogurt
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract optional
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

Instructions

  • Preheat oven to 350°F. Line or grease a mini muffin pan or regular muffin tin.
  • In a mixing bowl, mash the avocado until smooth.
  • Add applesauce, yogurt, egg, cinnamon, and vanilla extract. Mix until combined. Stir in flour and baking powder until just mixed.
  • Scoop batter into muffin tin about 3/4 full. Bake muffins for 18-22 minutes until center comes out clean with a toothpick.
  • Let cool before serving!
