Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 very ripe bananas mashed
  • 1/2 large carrot grated
  • 1/2 cup cottage cheese
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup melted butter or coconut oil
  • 1/2 tsp cinnamon optional

Instructions

  • Preheat your oven to 350°F and line or grease a muffin tin.
  • In a large bowl, mash the bananas. Add the grated carrot, cottage cheese, applesauce, milk, egg, and melted butter or coconut oil. Mix until combined.
  • Add the flour, baking powder, baking soda, and salt directly into the wet ingredients. Gently stir until just combined. Be careful not to overmix.
  • Fill muffin cups about 3/4 full.
  • Bake for 18 to 22 minutes, or until the tops are lightly golden and a toothpick comes out clean.
  • Let the muffins cool before serving.
