1tspbaking powder
1/2tspbaking soda
1/4tspsalt
2very ripe bananasmashed
1/2large carrotgrated
1/2cupcottage cheese
1/4cupunsweetened applesauce
1/4cupmilk
1egg
1/4cupmelted butter or coconut oil
1/2tspcinnamonoptional
Instructions
Preheat your oven to 350°F and line or grease a muffin tin.
In a large bowl, mash the bananas. Add the grated carrot, cottage cheese, applesauce, milk, egg, and melted butter or coconut oil. Mix until combined.
Add the flour, baking powder, baking soda, and salt directly into the wet ingredients. Gently stir until just combined. Be careful not to overmix.
Fill muffin cups about 3/4 full.
Bake for 18 to 22 minutes, or until the tops are lightly golden and a toothpick comes out clean.
