Instructions
Marinate the beef. Add the thinly sliced beef to a bowl with soy sauce, cornstarch, and sesame oil. Toss until evenly coated and let it sit while you prepare the remaining ingredients.
Make the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, sesame oil, cornstarch, and water. Set aside.
Cook the chow mein noodles according to the package directions. Drain well and set aside.
Heat a large skillet or wok over medium-high heat. Add the cooking oil followed by the beef. Cook for about 2 to 3 minutes, stirring occasionally, until the beef is browned and just cooked through. Transfer the beef to a plate.
In the same pan, add the onion, carrots, and cabbage. Stir-fry for about 3 to 4 minutes, or until the vegetables are slightly softened but still have a little crunch. Add the garlic and cook for another 30 seconds.
Add the cooked noodles and beef back into the pan. Pour the chow mein sauce over everything. Toss well and cook for another 1 to 2 minutes, until the noodles are evenly coated and the sauce has slightly thickened. Add the green onions and give everything one final toss.
