Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup all purpose flour
  • 1/4 cup milk
  • 1/2 banana mashed
  • 1 tsp baking powder
  • ¼ tsp salt

Instructions

  • Blend: Add all ingredients to a blender and blend until smooth. The batter should be thick but pourable. Allow batter to sit for 5 minutes before cooking - this helps it thicken.
  • Cook: Heat a nonstick pan over medium-low heat and lightly grease with butter or coconut oil.
  • Pour & Flip: Pour small pancake rounds onto the pan. Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes.
  • Serve: Let them cool slightly and serve as-is or with a drizzle of nut butter or yogurt for extra protein.
