Blueberry Chia Seed Jam

This homemade blueberry chia seed jam is an easy and tasty recipe to add to breakfast toast! The jam gets gelled up from the superfood chia seeds! You can also add it to your oatmeal bowls, pancakes or french toast for a fruity kick!

Ingredients

  • 1 tbsp chia seeds
  • 1/4 cup water
  • 1 cup frozen blueberries
  • 1 tbsp maple syrup
  • 1 tsp fresh lemon juice
  • 1/2 tsp vanilla extract

Instructions

  • In a small bowl, allow chia seeds and water. Allow to soak for at least 30 minutes, until mixture gets thick and chia seeds swell up.
  • Add frozen blueberries to a saucepan and cook on low for 8-10 minutes, stirring often and mashing to break them up.
  • When the berries are broken up, mix in chia seed mixture, maple syrup, lemon juice and vanilla extract.
  • Add jam on top of toasts and add remaining to a glass jar. Allow to cool before storing in a sealed jar!

Notes

This jam can be left in the fridge for up to 1 week!
