These Blueberry Oat Bars have been on repeat in our house lately—and for good reason! They’re soft, naturally sweetened with banana (no sugar needed!), and packed with simple, nourishing ingredients I already have in my pantry.

Ingredients
¾cupquick cooking oatsblended into flour
½cupall purpose flour
½teaspoonbaking powder
½teaspooncinnamon
¼teaspoonsea salt
1ripe bananamashed
1egg
2tablespoonsmilk of choicedairy or non-dairy works
¼cupnut butter of choice
¼cupmelted coconut oil
½cupfresh or frozen blueberries
Instructions
Preheat your oven to 375°F and line a small baking dish (I use an 8x8) with parchment paper or lightly grease it.
Blend your oats in a blender or food processor until they reach a flour-like consistency.
In a large bowl, whisk together the oat flour, whole wheat flour, baking powder, cinnamon, and sea salt.
Add the wet ingredients: melted coconut oil, nut butter, mashed banana, egg, and milk. Stir until well combined.
Gently fold in the blueberries—be careful not to overmix if using frozen ones, as they can bleed color.
Spread the batter evenly into your prepared dish and smooth the top.
Bake for 25 minutes, or until the top is golden and a toothpick comes out clean.
Let cool before slicing into bars (this helps them hold their shape better!).
