Breakfast Burrito with Egg + Chicken Breakfast Sausage
Breakfast burritos are one of my favorite breakfasts as of recently so I'm sharing my GO-TO recipe that I make all the time. This one has fluffy scrambled eggs, chicken breakfast sausage links, peppers, onion, spinach and avocado. It's packed with SO much flavor!

Ingredients
1burritotortillaI like the Whole Foods 365 brand or La Fe Tortilleria
1teaspoonolive oil
1/2cupred bell pepper and oniondiced
handful of baby spinach
2largeeggsscrambled
2chicken breakfast sausage linkI like the brand Amylus
1/2medium avocado
shredded cheese optional
toppings: salsa, sour cream
Instructions
Preheat pan to medium heat with oil. Add in bell peppers and onions to cook until soft, then add in baby spinach until wilted. Pour in eggs to scramble with the veggies until cooked, seaosn with sea salt and pepper. Add into burrito tortilla.
Add more oil to the pan to cook chicken breakfast links until lightly browned. Cut into small pieces, then add into burrito tortilla.
Add avocado into tortilla. Roll up into a burrito and pan-fry both sides in the pan until lightly browned and crisp. Serve with salsa, sour cream and/or avocado!
