Ingredients
1 largeburrito tortillasI like the Whole Foods 365 brand or La Fe Tortilleria
1teaspoonoil
small handful of diced red bell peppers
handful of baby spinach
2large eggs
2slicesturkey baconI used Diestel Family Ranch turkey bacon
1/2avocado
2tablespoons shredded cheese i used Violife Foods vegan cheese
Instructions
Preheat pan to medium heat with oil. Add in bell peppers to cook until soft, then add in baby spinach until wilted. Pour in scrambled eggs and cook until eggs are done. Season with sea salt and pepper.
Remove scrambled eggs from pan and add into burrito tortilla. Add more oil to pan if needed to cook turkey bacon until slightly crisp.
Add turkey bacon on top of eggs, along with avocado and shredded cheese. Roll up into a burrito and pan-fry both sides in the pan until lightly browned and crisp. Serve with salsa, sour cream and/or avocado!
