Ingredients

  • 1 cup quick oats
  • 1 cup milk
  • 1 egg
  • 1/3 cup plain whole milk yogurt
  • 1/2 cup finely grated carrot
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder optional

Instructions

  • Mix the oats and milk and let sit for five minutes to soften.
  • Stir in the egg, yogurt, and grated carrot. Add the cinnamon and baking powder and mix well.
  • Scoop into a greased muffin tin and bake at 350°F for 18 to 20 minutes, until set. Let cool before serving.
