Chai Spiced Loaf

A moist and delicious chai loaf with a mix of sweet, spicy and slightly flowery flavors! So perfect as a snack or as breakfast in the morning with a cup of coffee or a latte. Try this loaf and you'll definitely be hooked if you're a huge chai flavor fan!

Ingredients

  • 1/2 cup coconut oil melted
  • 2/3 cup cane sugar
  • 2 eggs
  • 1/2 cup brewed chai
  • 1/3 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 1/4 cups oat flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Icing

  • 1 cup powdered sugar
  • 1 tablespoon almond milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat oven to 350F. Prepare loaf pan with parchment paper or cooking spray.
  • In a large bowl, mix together melted coconut oil and cane sugar. Add in eggs, brewed chai tea, almond milk and vanilla.
  • Stir in oat flour, baking powder, salt, cardamom, cinnamon, nutmeg and cloves.
  • Transfer to baking pan and bake for 55-60 minutes or until toothpick inserted in center comes out clean. While loaf is baking, prepare icing in a small bowl. Pour over loaf after allowing it to cool for at least 10 minutes and cut into 8 slices!
