Ingredients
3/4cuppumpkin puree
1egg
1/2cupcoconut oilmelted
1tspvanilla extract
3/4cupspelt flourcan replace with oat flour
3/4cupoat flour
3/4cupcoconut sugar
2tsppumpkin pie spice
3/4tspbaking soda
1/4tspsea salt
2/3cupchocolate chips
Instructions
Preheat oven to 350F. Prepare a 9x13 or 8x8 baking pan with parchment paper.
In a large mixing bowl, mix together pumpkin puree, egg, melted coconut oil and vanilla extract.
Add in flour, coconut sugar, pumpkin pie spice, baking soda and sea salt. Fold in chocolate chips.
Transfer to baking pan and spread until top is even. Sprinkle with extra chocolate chips.
Bake for 20 minutes until toothpick comes out clean! Allow to cool for 10 minutes before transferring to cooling rack to cut into 18 pieces.
