Cottage Cheese Apple Muffins (No Sugar, Baby & Toddler Friendly)

Ingredients
1cupcottage cheesefull-fat recommended
1cupfinely grated apple
2eggs
1/4cupunsweetened applesauce
1/4cupmelted butter or coconut oil
1tspvanilla extractoptional
1cupall-purpose flouror half whole wheat
1/2cuprolled oats
1tspbaking powder
1/2tspbaking soda
1tspcinnamon
pinchof saltoptional for babies under 1
Additional Add-ons:
thinly sliced strawberries for topping
grated pearswap or mix with apple
Instructions
Preheat oven to 350°F and line a muffin tin.
Blend cottage cheese until smooth, then pour into a large bowl and whisk with eggs, applesauce, melted butter, and vanilla.
Stir in grated apple, then add all dry ingredients and gently mix until just combined.
Fill muffin cups 3/4 full, top with sliced strawberries if using, and bake for 18–22 minutes until set.
