Ingredients
1cupall-purpose flour
1tspbaking powder
1/2tspbaking soda
1/4tspsalt
2very ripe bananasmashed
1/2cupcottage cheese
1/4cupunsweetened applesauce
1/4cupmilk
1egg
1/4cupmelted butter or coconut oil
1/2tspcinnamonoptional
Instructions
Preheat oven to 350°F and line or grease a muffin tin.
In a bowl, mash the bananas, then mix in the cottage cheese, applesauce, milk, egg, and melted butter or coconut oil.
Add the flour, baking powder, baking soda, and salt directly into the wet ingredients and gently mix until just combined.
Fill muffin cups about 3/4 full and bake for 18–22 minutes, until lightly golden.
