Easy Breakfast Burritos

These breakfast burritos are filled with scrambled eggs, crisp turkey bacon and crunchy broccoli! It's an erewhon copycat of their $17 burrito but this is EVEN BETTER! My burrito recipe is pan-fried for a crispy exterior! I would eat this burrito for any meal!

Ingredients

  • 2 large burrito tortillas I got ones from Whole Foods
  • 2 teaspoons olive or avocado oil
  • 1 cup broccoli florets cut into small pieces
  • 6 large eggs scrambled
  • sea salt and pepper to taste
  • 4 slices turkey bacon
  • salsa verde or other salsa of choice 

Instructions

  • Preheat pan to medium heat with oil. Add in broccoli florets and cook until slightly softened, seasoning with salt and pepper. Push to side of pan.
  • Add more oil to the pan and pour in scrambled eggs. Season with salt and pepper. Cook until no longer runny. Push to side with broccoli.
  • Add more oil to the pan and add in turkey bacon slices. Cook until lightly browned.
  • Warm up burrito sized tortilla and add in eggs, broccoli and turkey bacon. Roll up into a burrito and pan-fry both sides in the pan until lightly browned and crisp. Serve with salsa, sour cream and/or avocado!
