Easy Hidden Veggie Cauliflower Mac & Cheese (Toddler-Approved!)

As a mom of two, I’m always looking for easy, nutritious meals that my toddler will actually eat. And let’s be real—getting veggies into little ones isn’t always easy! That’s why I love this Hidden Veggie Cauliflower Mac & Cheese—it’s creamy, cheesy, and packed with a whole serving of cauliflower, but my toddler has no idea!

Ingredients

  • 2 cups cauliflower florets steamed until soft
  • 1 cup shredded cheddar cheese
  • ½ cup milk or more for a thinner sauce
  • ½ teaspoon garlic powder adds a mild, yummy flavor
  • ½ teaspoon onion powder optional, but enhances taste
  • ½ teaspoon salt
  • 1 tablespoon butter
  • 8 ounces pasta elbow, shells, or any toddler-friendly shape

Instructions

  • Cook the Pasta: Boil pasta according to package instructions. Drain and set aside.
  • In a blender, combine cauliflower, shredded cheese, milk, butter and seasonings. Blend until smooth and creamy. Add more milk if needed for the right consistency.
  • Pour the creamy cauliflower cheese sauce over the pasta and mix well. Serve warm!
