Ingredients

  • 2/3 lb ground pork
  • 2 green onions chopped
  • 1 tbsp oyster sauce
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 2 tsp minced ginger or ½–1 tsp ginger powder
  • 1 tsp minced garlic
  • 1 tbsp cooking wine
  • black pepper to taste
  • 1/3 cup low-sodium chicken broth
  • dumpling wrappers

Instructions

  • In a bowl, combine ground pork, green onions, oyster sauce, soy sauce, sugar, ginger, garlic, cooking wine, black pepper, and chicken broth.
  • Mix until well combined and slightly sticky.
  • Lightly oil your cocottes or ramekins. Fill each about 1/3 full with the pork mixture and press into an even layer.
  • Place dumpling wrappers directly on top, slightly overlapping if needed. No need to wet the wrappers - they will soften naturally while steaming.
  • Place the cocottes or ramekins into a steamer. Steam over medium-high heat for 15–20 minutes, or until the pork is fully cooked.
  • Let cool for a few minutes, then top with: chili oil, soy sauce, chopped green onions. Serve warm and enjoy.
