8ozlo mein noodles
2–3 chicken sausage linkssliced into rounds
1cupshredded carrots
1medium zucchinithinly sliced
2cupsfresh spinach
2clovesgarlicminced
1tablespoonolive oil
Stir Fry Sauce
3tablespoonssoy saucelow sodium preferred
2tablespoonswater
1tablespoonhoney
1teaspoonsesame oil
1teaspooncornstarch mixed with 1 tablespoon warm water
Instructions
Bring a pot of water to a boil and cook the lo mein noodles according to package instructions. Drain and set aside.
Heat olive oil in a large pan over medium heat. Add the sliced chicken sausage and cook for 4–5 minutes, until golden and slightly crispy on the edges.
Add the minced garlic, carrots, and zucchini to the pan. Sauté for 3–4 minutes until the vegetables begin to soften.
Stir in the spinach and cook until wilted, about 1–2 minutes.
In a small bowl, mix together soy sauce, water, honey, sesame oil, and the cornstarch slurry.
Add the cooked noodles to the pan. Pour the sauce over everything and toss until the noodles and vegetables are evenly coated and heated through. Serve warm!
