Ground Beef & Bok Choy Udon Noodles

Here's a delicious udon noodle recipe with flavorful beef & crunchy bok choy! It's a simple recipe made in 20 minutes & uses a simple sauce that brings SO much flavor!

Ingredients

  • 2 tablespoons oil
  • 2 cups bok choy chopped
  • 2 cups broccoli florets
  • 16 oz udon noodles
  • 2 teaspoons sesame oil
  • 8 oz ground beef
  • 1/3 cup mirin
  • 1/3 cup light soy sauce
  • sesame seeds for garnish

Instructions

  • Prepare udon noodles based on package instructions. I used frozen udon and blanched it in boiled water for 3 minutes.
  • Preheat a pan to medium heat with oil. Add in bok choy and broccoli to cook until softened. Remove from pan and leave to side.
  • Add more oil into pan and add in beef to cook until no longer pink. Add veggies back in along with cooked noodles and sauce to toss together. Garnish with sesame seeds before eating!
