Ingredients

  • 1/2 lb ground beef
  • 1/4 cup edamame shells and skin removed
  • 1/4 cup steamed veggies of choice broccoli and cauliflower work great
  • 1 egg
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • Sea salt + black pepper

Instructions

  • Steam the broccoli and cauliflower until very soft. Finely chop and gently squeeze out any excess water.
  • In a bowl, combine the ground beef, edamame, chopped veggies, egg, flour, garlic powder, thyme, and salt (if using). Mix until well combined.
  • Form small, thin patties. Keeping them thin helps them cook evenly and gives them a tender texture.
  • Heat a lightly oiled pan over medium heat. Cook patties for about 3 to 4 minutes per side, or until fully cooked through.
  • Let cool slightly before serving.
