2tablespoonsolive oil
1/3poundground turkey
1medium oniondiced
1red bell pepperdiced
4garlic cloveschopped
2teaspoonspaprika
1teaspooncumin
1/4teaspoonchili powder
1 28-ouncecan whole peeled tomatoes
6large eggs
Salt and pepperto taste
Fresh cilantro and parsleychopped

Instructions
Heat olive oil in a large skillet over medium heat.
Add ground turkey and cook until browned, breaking it up as it cooks.
Push the turkey to one side. Add onion and bell pepper to the other side and cook for about 5 minutes, until softened.
Stir in garlic, paprika, cumin, chili powder, salt, and pepper. Cook for 1 minute.
Add whole peeled tomatoes and gently crush them with a spoon. Simmer until the sauce thickens slightly.
Make small wells in the sauce and crack in the eggs.
Cook until the eggs are done to your liking. Leave uncovered, partially cover, or fully cover to cook the eggs faster.
Garnish with cilantro and parsley. Serve warm with sourdough or baguette.
