Ground Turkey Shakshuka

This ground turkey shakshuka is a simple, hearty one-pan meal made with tender vegetables, warm spices, rich tomatoes, eggs, and added ground turkey for extra protein. Ingredients

  • 2 tablespoons olive oil
  • 1/3 pound ground turkey
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 4 garlic cloves chopped
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1 28- ounce can whole peeled tomatoes
  • 6 large eggs
  • Salt and pepper to taste
  • Fresh cilantro and parsley chopped
  • Sourdough or baguette for serving

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add ground turkey and cook until browned, breaking it up as it cooks.
  • Push the turkey to one side. Add onion and bell pepper to the other side and cook for about 5 minutes, until softened.
  • Stir in garlic, paprika, cumin, chili powder, salt, and pepper. Cook for 1 minute.
  • Add whole peeled tomatoes and gently crush them with a spoon. Simmer until the sauce thickens slightly.
  • Make small wells in the sauce and crack in the eggs.
  • Cook until the eggs are done to your liking. Leave uncovered, partially cover, or fully cover to cook the eggs faster.
  • Garnish with cilantro and parsley. Serve warm with sourdough or baguette.
