Ingredients
1tablespoonolive or avocado oil
1/2yellow oniondiced
1/2cupdiced carrots
1yellow squashdiced
A handful of baby spinach
1lbground turkey
Cooked rice for serving
Optional toppings: sesame seedschopped green onions
Sauce:
1/2cuplow-sodium soy sauce
1/4cupwater
2tablespoonsrice vinegar
2tablespoonsbrown sugaradjust to taste
2tablespoonshoney
2teaspoonsminced garlic
1teaspoonground ginger
1tablespooncornstarch
2tablespoonswarm water
Instructions
Make the sauce: Mix soy sauce, water, rice vinegar, brown sugar, honey, garlic, and ginger in a small bowl. In another bowl, stir cornstarch with warm water to create a slurry. Set both aside.
